1½cupheavy cream(or evaporated milk or milk, 250ml)
1pie crust(250g)
1tsplemon zest
1tbsppumpkin pie spices
Instructions
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine the eggs, lemon zest, brown and white sugar. Mix well until all the ingredients are thoroughly combined.
Add the pumpkin puree and pumpkin spices (you can find the recipe here) to the egg mixture. Add the milk and stir until everything is well incorporated and the filling is smooth.
Roll out the pie crust and place it into a 9-inch (22cm) pie dish. Trim the excess crust from the edges and crimp them decoratively if desired.
Pour the pumpkin filling into the pie crust, spreading it evenly.
Place the pie in the preheated oven and bake for 15 minutes.
Reduce the oven temperature to 350°F (175°C) and continue baking for an additional 40-50 minutes, or until the filling is set and a toothpick inserted into the center comes out clean.
Remove the pie from the oven and let it cool completely on a wire rack.
Once cooled, refrigerate the pie for at least 2 hours, or overnight, to allow it to set.
Serve chilled or at room temperature. Optionally, you can top the pie with whipped cream before serving.
