Making an apple pie from scratch is so much easier than you might think. This classic recipe of Apple Pie combines the sweet and tender flavors of baked apples with a flaky, buttery crust. It can be served with fresh vanilla ice cream, whipped topping or even just on its own.
Sift the flour into a large bowl, add salt and the butter.Rub in with your fingertips until the mixture resembles fine breadcrumbs.Add one egg and mix to form a dough. Just fold gently don't knead the dough.Cover and chill at least 30 minutes while preparing the filling.
In a large bowl put the lemon juice. Halve, and core the apples. Slice the apple halves and toss them with the lemon juice.Over medium heat, add brown sugar, cornstarch, cinnamon, nutmeg, and water to a heavy pan.Bring to a boil while stirring the sauce and cook for 1 or 2 minutes until just thickened.Add apples, cover and cook for 10 minutes.Add vanilla extract and butter and mix until melted, then turn off the heat.Let it chill and reserve for later.
Turn out the dough onto a lightly floured surface and divide into 2 portions.Roll one dough to a thin layer approximately 1/4 inches, then trim the edges.Fill with the apple mixture.Roll the remaining crust and decorate a lattice on top of the pie.Add a pinch of cinnamon to an egg yolk and beat until foamy. Brush over crust.
In a preheated oven, bake at 350°F (175°C) for 40 to 45 minutes or until the top crust has browned.Remove from oven and allow to cool at least 30 minutes before slicing.
